SALMON SPREAD

INGREDIENTS

1. Two cups cooked and flaked salmon (great use of leftovers)
2. 1 Tbsp. lemon juice
3. 2 tsp. onion
4. 1 tsp. horseradish
5. 1/4 tsp. salt
6. 1/4 tsp. liquid smoke
7. 8 oz softened cream cheese
8. chopped walnuts
STEPS
1. Mix all ingredients together until smooth, except for walnuts.
2. Roll mixture into a ball, log, or whatever shape you want.
3. Top with walnuts and serve with crackers.

BAKED SALMON

INGREDIENTS

1. Salmon fillets, skin on
2. 1 lemon
3. ½ onion
4. Dill
5. Garlic salt
6. Pepper
7. 4 Tbs. Butter (optional)
STEPS
1. Preheat oven to 400 degrees.
2. Line baking sheet with foil and spray with Pam.
3. Place fillets on sheet, skin side down.
4. Season with dill, garlic salt, and pepper to taste.
5. Thinly slice onion and scatter over fish.
6. Thinly slice one half of lemon and scatter over fish.
7. Thinly slice butter and place on fish
8. Bake at 400 degrees until flaky. (10-15 min. depending upon thickness)
9. Remove from oven and squeeze the remaining lemon over top.

GRILLED SALMON

INGREDIENTS

1. Salmon fillets, skin on
2. 1 lemon
3. 1 tsp. dried dill
4. 3 cloves garlic
5. Salt and Pepper
6. ½ Cup olive oil
STEPS
1. Combine finely chopped garlic, salt, pepper, dill, olive oil, and juice from half of the lemon. Let stand at least an hour.
2. Clean, spray with Pam, and then preheat grill on high.
3. Place fillets meat side down on grill for 3 minutes.
4. Turn fillets skin side down and coat generously with olive oil mixture.
5. Close grill and reduce heat to medium.
6. Check often after 5 minutes. Fish is done as soon as it flakes easily.
7. Remove from grill and squeeze the remaining lemon over top.

SEAFOOD FETTICINE

INGREDIENTS

1. 1 ½ Lbs.Halibut, salmon*, and cod uncooked
2. 2 jars of white alfredo sauce of your choice
3. 1 12 oz. can evaporated milk
4. pepper
5. 1 box fettuccine noodles
* if using smoked salmon, do not combine with any other fish

STEPS
1. Cut fish into bite size pieces.
2. Add evaporated milk to sauce if needed to thin.
3. Heat sauce and add fish. Avoid over stirring which can cause the fish to break up.
4. While fish is cooking in the sauce, boil the fettuccine as directed.
5. Drain noodles and add sauce.
6. Top with grated parmessan cheese.
